Award Winning Recipe


I know that some of you have tried my Black Bean Salad recipe. Well, recently we had a Healthy Meeting Eating challenge at work where each department in the bank was given the assignment to make a healthy snack. And my department chose to make Black Bean Salad and Orange Julius'. And we won! We got a trophy and five dollars each! I was so excited to win! (I am a little competitive!) So if you haven't tried the recipe yet, I challenge you to try it! It is so yummy!



Black Bean Salad


1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1 small onion, chopped
1 green bell pepper, chopped
1 avocado - peeled, pitted, and diced
1 large tomato, seeded and chopped
1 T dried cilantro
1 lime, juiced
1/4 to 1/2 tsp cayenne pepper
1/2 teaspoon garlic powder
Salt to taste

DIRECTIONS:In a large bowl, combine the black beans, corn, onion, bell pepper, avocado, tomato, cilantro, and lime juice. Season with cayenne pepper, garlic, and salt. Toss, and chill until serving.
Approximately 10 servings

This salad is the only "bean-salad" Josh LIKES! He begs me to make it all the time! Thanks Karen for a way to get this guy to like Beans! HaHa! No, seriously it is the BEST mexican side dish... we love it! (Even Leah!)
