Black Bean Salad


Here is a terrific recipe that I found at All Recipes and tweaked to suit my tastes. It is very healthy and delicious, and is a great compliment to any Mexican meal. (I have eaten it by itself for a meal too!) Try it and let me know what you think!
Black Bean Salad
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1 small onion, chopped
1 green bell pepper, chopped
1 avocado - peeled, pitted, and diced
1 large tomato, seeded and chopped
1 T dried cilantro
1 lime, juiced
1/4 to 1/2 tsp cayenne pepper
1/2 teaspoon garlic powder
Salt to taste

DIRECTIONS:
In a large bowl, combine the black beans, corn, onion, bell pepper, avocado, tomato, cilantro, and lime juice. Season with cayenne pepper, garlic, and salt. Toss, and chill until serving.
Approximately 10 servings

To anyone reading these comments I give this recipe 5 stars! Karen's made it for me twice and it's absolutely delicious!! But of course, everything Karen makes is delicious.
