Chunky Granola Recipe

Now that it is fall and the weather is turning chilly, it is nice to be able to get back into baking, without having to worry about overheating the house or myself! I recently made a batch of granola and have been talking it up to several people, and they in turn have requested the recipe! So here is the recipe (especially for you Mindy and Matt!)......

Chunky Granola

Heat 5 cups rolled oats @350 degrees for 10 minutes.

Pour into a large bowl, then add:

1/2 C sunflower seeds
1/2 C chopped almonds
1/2 C wheat germ
1/2 C powdered milk
1 C All Bran (the twig-like ones, not flakes)
1/2 C coconut

Mix together well. In a small saucepan, over medium heat combine:

1/4 C oil
1/2 C honey
2/3 C peanut butter
1 tsp. vanilla

Stir until ingredients are melted together. Pour over dry ingredients and mix together well. Bake at 350 degrees for 15-20 minutes, stirring every 5 minutes. (I usually set the timer for 5 minutes each time to remind me to stir!) Cool completely, then break apart and store in an airtight container. *You can add raisins or Craisins if you'd like!*

P.S. I tend to like my granola very crunchy, so I bake it for 20-25 minutes. Every oven is different, so be careful not to burn it! If you like your granola on the chewy side, just keep checking the consistency as you stir it every 5 minutes, and take it out when it is done to your liking.
