When Mara, Melissa, Kaye, and I were in Duluth a week ago, Mara's mother, Connie, made us this delicious pancake for breakfast. This past Saturday was one of my co-workers birthday, so I decided to make this for all of us to enjoy. It is a very easy recipe to make, and the most time consuming part of the process was peeling and slicing the apples. Not bad at all! And it is so good! So, try it out, and let me know what you think!
Apple Puffed Pancake
Ingredients:
6 large eggs
1 1/2 cups skim milk

1 cup all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Pinch of nutmeg

1/2 cup (1 stick) unsalted butter, room temperature
4 apples, such as Gala or Red Delicious, peeled, quartered, cored and thinly sliced
1 tablespoon light-brown sugar
Confectioners' sugar, optional

Directions:
Preheat oven to 425 degrees.
Combine eggs, milk, and vanilla in the jar of a blender. Blend until well combined. Add flour, granulated sugar, salt, cinnamon, and nutmeg. Blend until dry ingredients are well incorporated; set aside.
Place butter in a 9-by-13-inch glass baking dish. Transfer dish to oven and heat until butter has just melted. Carefully remove from oven and place apples in a single layer in baking dish. Return to oven and cook until butter begins to bubble, about 4 minutes.
Pour batter over apples, sprinkle with brown sugar, and continue baking until puffed and golden, about 20 minutes. Sprinkle with confectioners' sugar, if desired; serve immediately.

Serves 6-12 people, depending on portion size! (Is yummy with a drizzle of maple syrup! Would also be good with a side of bacon or sausage.)

Hi Karen. This is Kristin, from church. I have been reading your blog periodically and when I saw your latest post, I had to laugh a little. I posted an Apple Puff Pancake recipe just a couple days ago too because I came across it and tried it out. It was very yummy so I wanted to share it as well! I guess we were thinking the same thing!
